Hatch Chile, there are a variety of southwestern dishes available.
Hatch Chile is a high grade, sun dried chile that is obtained from
Covarrubia's Farm in the Hatch Valley along the Rio Grande, sometimes
called the "Napa Valley of Chile." Nowhere else in the
country is it possible to grow as high a quality long stem chile
which makes the ingredients to dishes containing it very unique.
